FORT WAYNE, Ind.--Alpha™ 5800 soy protein, the first in a line of new highly soluble soy proteins, is being introduced by Central Soya Co. Inc. Alpha 5800 will be marketed as an alternative for whey protein concentrates and isolates, soy protein isolates, nonfat dry milk and other proteins in food products. Produced through a patent-pending process, Alpha 5800 retains natural solubility and emulsification properties as well as a natural flavor, the company said.
