Guar Gum Substitutes For Tortillas

WHITE MARSH, Md.TIC Gums introduced two products for corn and flour tortilla manufacturers during the Tortilla Industry Association (TIA) 2012. Ticaloid® GR 5420 and Ticaloid® Tortilla are hydrocolloid blends and contain no guar gum, yet maintain guar gum properties.

Ticaloid® GR 5420 is a 100% replacement for guar gum in bakery mixes. It is a hydrocolloid blend that manages the retention of water and maintains the dough texture that is necessary for manufacturers. Usage is 2 to 5 ounces for 100 pounds of flour. Ticaloid® Tortilla, also guar-free, is a hydrocolloid blend that promotes moisture control and flexibility. Standard usage is 4 to 8 ounces per 100 pounds of flour and TIC recommends five parts of water for every one part of gum used.
