FORT WAYNE, Ind.--Central Soya Company Inc. and the Health & Nutrition Group of Eridania Béghin-Say completed a research project and subsequent brochure on utilizing health-claim level soy protein concentrates in ready-to-eat cereals. The brochure describes soy protein concentrates and their characteristics for producing flaked cereals. Cereal formulations can be modified for slightly higher soy protein levels to allow for a sugar coating in the final product, geared toward the pre-sweetened cereal consumer.
