Ongoing suspicion of synthetic colors and a growing interest in all-natural products is driving use of natural food colors in Australia and New Zealand, according to a report from Londons Frost & Sullivan (www.food.frost.com). Annual revenue in the natural food color market in Australia is estimated between $12.6 million and $15.6 million, with estimated market growth projected at 5 percent to 8 percent annually. In 2002, beta-carotene accounted for the largest share of revenue in the market, followed by paprika, anthocyanins, carmine, annatto and curcumin.
