New Compound Improves Flavor of Food
August 12, 2008
Research has revealed a way to make healthy food taste as good as the junk food we love, according to research published in Scientific American.
According to the journal, researchers have found a compound that makes foods taste saltier or sweeter than they are. The compounds are called flavor modulators, and they trigger the brain into thinking a food is more flavorful than it is.
The journal reports that Cadbury and Coca-Cola are two companies that have taken an interest in the compound.
Senomyx, San Diego, CA, will utilize flavor modulators next year in Cadbury products and is also working on bitterness blockers that will improve the taste of foods like broccoli.Source: Magnifying Taste: New Chemicals Trick the Brain Into Eating Less
