ROCKVILLE, Md.Ethnic food is hot. According to Packaged Facts Center for Culinary Development (CCD), the increasing popularity of global cuisine reflects consumers sophisticated palates, their quest for adventure and their desire to interact with their food. The inherently healthy nature of many such cuisines is also pushing international fare into the mainstream. In Emerging Global Cuisines: Culinary Trend Mapping Report, CCD notes the following up-and-coming cuisines:

Peruvian, for its unique take on familiar ingredients, such as corn, potatoes and chiles.

Moroccan, which includes healthy Mediterranean ingredients and a savory-sweet flavor profile.

Korean, described as a gutsier, full-flavored version of Japanese.

Japanese, including but not limited to sushi, is a healthy, seafood-based cuisine.  

New Southern, comfort food with traditional flavors, but lightened up and taken to a new level of sophistication.
