Tortillas Fill Foodservice Menus

OAK PARK, Ill.Almost half (49%) of all foodservice menus include tortillas, according to the Foodservice Research Institute's MenuMine database. Further, in terms of its prevalance among other breads on the menu, tortillas make up 12.8% of the so-called Bread Bowl.

Burritos are the top menu item using tortillas (21.6%), followed by tacos (17.2%), quesadillas (15.3%) and wrap sandwiches (13.8%).

Perhaps not surprisingly, as chefs start using tortillas more often, they've begun fiddling with tortilla flavors. Flour and corn still top the flavor list, but data shows other flavorsincluding wheat, tomato, blue corn, spinach, garlic herb, jalapeno and beetturning up on menus. Low-carb and low-fat tortillas have also been spotted.
