MORRIS PLAINS, N.J.A clean label, powdered cake emulsifier from Palsgaard, Palsgaard® SA 6600, contains one emulsifier and one food carrier. Using Palsgaard SA 6600 in a cake formulation makes it possible to replace hardened fats and trans fats with healthier vegetable oils, which can improve a cakes moistness and maintain softness during storage. Palsgaard SA 6600 can carry high amounts of oil, making it a flexible ingredient to use in different types of cake products, including sponge cakes, Swiss rolls, cupcakes, muffins and other cake products with a high fat content.

This ingredient provides simplified, consumer-friendly labeling while offering additional benefits. Palsgaard SA 6600 is allergen-free, containing no milk, soya or wheat proteins, in accordance with Directive 2000/13/EC, so there is no risk of allergens from any raw materials. Instead, it is based on 100% vegetable raw materials and is both kosher and halal certified. Additionally, it provides increased outputs, no premixing bottlenecks, increased production capacities, low dosages and less product wastemaking it an ideal solution for automating production.

Because Palsgaard SA 6600 consists of only one emulsifier and one food carrier, there is no need to consider multiple ingredients and effects. As a result, product development can become more secure and less costly, and adjustments are easier to make either to the development of new products or to existing products.
