Spicing up Eggnog

Eggnog is one of those polarizing foodstuffseither you love the rich, decadent drink, or you really, really dont. But those who say no thanks" to the creamy quaff might be interested to know that not all eggnogs are created equal.

An article in the Bellingham Herald reveals that folks in different regions of the United States have distinct flavor preferences when it comes to eggnog. Neal Glaeser, president of Denali Flavors in Weyland, Mich., tells the author that his company has recipes for some 30 egg nog bases. In the article, Glaeser says: "The Midwest likes rum and nutmeg, the West Coast is more spicy with allspice and a little bit of cinnamon. In New England, the eggnog is typically milder. There's no dominant flavor, like a custard. Southerners want their eggnogs a little sweeter, with cinnamon and not very rummy."
