With caramel continuing as one of the top flavors in the U.S. market, Symrise Flavors offers its Completely Caramel Collection, a kit of eight on-trend caramel flavors: caramel, marshmallow, condensed milk, brown sugar, maple, vanilla, toffee and butterscotch. The collection is targeted to consumers who, eager to experience caramel taste profiles, will find new varieties and nuances of flavor tonalities in these offerings.
Using caramel as a base, these inspiring flavors are suited to a wide variety of formulations, all of which achieve delectable and distinctive results. Over the years, the popularity of the old-fashioned favorite, caramel, has held strong. In fact, when Milton Hershey launched his company in 1896 – his signature product was caramel, rather than chocolate. Today, caramel remains a winning ingredient in all kinds of confectionery and bakery products. Its orange to brown coloring and sweet toasted flavor is a tantalizing delight.
Carol McBride, Symrise’s Sweet Category Directory, explained that when used with the core-richness of caramel as a base, the caramel flavors as found in the sample kit can deliver customized, nuanced flavor variations to a wide range of confectionery and dessert products.
Ms McBride reported that the kit has everything product development people need to begin experimenting with caramel flavors in their own applications. Caramel, a top flavor in foods and beverage, is sparking new flavor types such as dulce de leche, butterscotch almond, salted caramel, caramel latte and caramel chai. Over the last five years, marshmallow has demonstrated a 154% increase in desserts. The increased use of condensed milk was found in many mainstream products, attributed to its popularity among the growing Hispanic population. Brown sugar flavor, with the taste of caramel, dried fruit and maple, has experienced a 93% increase in dishes since 2009. During the same period, the use of maple in consumer products has grown by 124%. Vanilla remains the most common menu flavor within the dessert category, while toffee grew by 77% and butterscotch flavored ingredients grew 69%.
