ASHEVILLE, N.C.--Gaia Foods (www.gaiafoods.com) introduced Aphanin™, an extract from AFA containing a high concentration ofphycocyanin. Phycocyanin is the blue pigment present in blue-green algae that, when taken orally, has been shown to have strong antioxidant and anti-inflammatory properties, according to the company. The anti-inflammatory aspect stems from phycocyanin functioning as a COX-2 inhibitor, thus blocking the synthesis of inflammatoryeicosanoids.
