MIAMI--According to Rainforest Botanicals (www.rainforestbotanicals.com),research has shown purple corn has many health benefits because it contains C3G,an anthocyanin and natural colorant with potent antioxidant properties. Whenadministered to rats and mice in several different studies, C3G reduced thenumber of tumors (both benign and malignant) and early signs of colorectalcancer; significantly suppressed acute inflammation in pro-inflammatory diseasestates; lowered oxidation levels in blood serum; decreased levels of totalcholesterol by 16 percent; and lowered weight gain despite a high-fat diet. Theresearchers concluded purple corns anthocyanin pigment has a basis as a functionalfood factor that may be beneficial for preventing diabetes and obesity(J of Nutrition, 133, 7:2125-30, 2003). Also, the purple cornscoloring provides a natural alternative to synthetic food dyes.
