HAIFA, IsraelBlack Garlic Extract EFLA451 from Frutarom has  similar cardiovascular benefits as standard garlic, without the off-putting odors.

Designed for use in dietary supplements and functional food applications, the garlic extract is derived from fresh garlic bulbs (Allium sativum). The garlic is auto-fermented under warm, humid conditions until the white garlic cloves gradually darken to their final black appearance. Black garlic is low in alliin and allicin, both precursors of the substances which are responsible for the undesirable odors of fresh garlic. Having lost its pungency, the black garlic has a sweetish, mild flavor and smell, similar to that of oven-roasted garlic.
According to Frutarom, compared to fresh garlic, black garlic has a higher antioxidant potency and thus displays proven cardiovascular benefits. In addition to its positive impact on blood pressure and blood lipids, it has immunomodulatory activity, retards arterial calcification and accelerates wound healing.

Black garlic can be used in traditional nutraceutical supplements, such as tablets and capsules, but also in liquid applications with a heart health positioning, instead of or in combination with standard garlic. Due to its mild taste and good water solubility, black garlic is also suitable for a variety of sweet and savory food applications.

The black garlic extract is available in powder form.
