HAIFA, IsraelFrutarom developed Black Garlic Extract EFLA451, a powder extract that can be used in dietary supplements and functional food applications. Derived from fresh garlic bulbs (Allium sativum), the garlic is auto-fermented until the white close darken to a black appearance. The processing reduces levels of alliin and allicin, and has a more mild scent and flavor, similar to that of oven-roasted garlic.
According to Frutarom, black garlic has higher antioxidant potency and affects several cardiovascular health factors, including blood pressure, blood lipids, arterial calcification and wound healing. It can be incorporated into tablets and capsules, as well as liquid applications and delivery platforms. The mild taste and good water solubility also mean it can be included into different food applications.
