FDA Targets Glazed Seafood Weight

CHICAGOFDA has announced that it is in the process of reviewing a multistate investigation involving glazed seafood and priced weights. The weight of the water used to glaze seafood, such as raw fish fillets, is not to be included in the overall weight of the product.
However, investigations into various products have shown that this is not the case. In some instances, the ice glaze accounted for as much as 40% of the products labeled weight.
Seafood and some other products are glazed with water prior to freezing to preserve the quality and integrity of the food during distribution and frozen storage.
If FDA discovers that economic fraud is being perpetrated, it will respond by issuing warning letters and then following up with stronger action, if merited.
