Gelatin Replacement Solution For Yogurts

WESTCHESTER, Ill.Ingredion Inc., launched ETENIA 457 potato starch, a gelatin replacement ingredient for the dairy industry.

ETENIA 457 potato starch is an ingredient solution that effectively replaces gelatin in yogurt formulations, delivering similar mouthfeel, stability and texture attributes provided by gelatin without affecting the quality of the final yogurt product.

The ingredient is a patented enzymatically converted potato starch that can build back or improve gel strength, giving dairy manufacturers the ability to fully or partially replace gelatin to optimize costs.

Ingredion developed a calculator to illustrate potential savingsapproximately 5% of the total yogurt formula cost is reduced when gelatin is replaced with ETENIA 457 potato starch.

Earlier this year, Ingredion was granted a U.S. patent for its clean label starch technology, based on processing technology that allows for production of high-performance and high-quality functional native starches.
