IFT Publication Reveals Top Food Trends

CHICAGOThe Top 10 GlobalFood Trends were revealed in the April issue of FoodTechnology, the monthly magazine of the Institute ofFood Technologists (IFT) (59, 4:20-32, 2005) (www.ift.org/foodtechnology).

According to an article by Elizabeth Sloan, food trends are shifting fromfamily-centered to health-related, as baby-boomers become empty-nesters. Convenience, quality and healthfulness were among the dominant influencesidentified by Sloan as shaping current food trends.
