RESEARCH TRIANGLE PARK, N.C.SourceFood Technology Inc. licensed proprietary technology from Brandeis Universitythat allows the company to infuse its omega-3 fish oil, OmegaSource, withspecially processed phytosterols. According to Source Food (www.nextraoil.com),animal studies conducted at Brandeis found the combination ingredient can reducecholesterol levels by more than 50 percent. According to K.C. Hayes, Ph.D., the Brandeis professor who headed the research, the combinationworks synergistically as omega-3s combat triglycerides while phytosterolsmitigate cholesterol absorption.

Source Food also announced it developed a new cooking oil, Nextra Gold,designed to prevent the absorption of cholesterol present in fried meat. Thecooking oil incorporates stable phytosterols to neutralize the cholesterolpresent in fried foods, and is available to restaurants and food processors.
