Specialty Starches Listedin Organic Foods

BRIDGEWATER, N.J.--Waxy-corn-based NOVATION starches from National Starch & Chemical Co. have been listed by the Organic Materials Review Institute(OMRI) for use in organic production. Processed foods labeled "organic" or "made with organic ingredients" may contain certain types of these cornstarches. The products in this list are NOVATION 2300-OC, NOVATION 2600-OC, NOVATION 2700-OC, NOVATION 4600-OC AND NOVATION 5600-OC native starches. They offer many of the functional characteristics of conventional modified starches but are labeled as cornstarch. Their functional characteristics include thickening, a smooth texture, resistance to shear from mixers and blenders, resistance to acids in fruits, prevention of weeping orsyneresis, and improved flavor burst in many food systems.
