AFS Announces Coffee Antioxidant Technology

AUSTIN, Texas--Applied Food Sciences (AFS) announced simplifications and yield improvements to its Coffee Antioxidant Technology (CAET™), a proprietary process that increases the natural antioxidant levels found in brewed coffee. CAET is a natural process that preserves the amount of antioxidants present in coffee beans and is applicable to any roast level and bean type, according to the company (www.appliedfoods.com). The technology yields medium roast coffee with at least 50 percent more antioxidants and dark roast coffee with at least 100 percent more antioxidants. "Our extensive research and development has yielded a very effective, 100 percent natural processing method that does not affect the taste and aroma," said Loretta Zapp, chief executive officer of AFS. "In fact, professional tasters, or cuppers, have commented that they can't taste a difference."
