Antioxidants Extend Shelf Life of Cereals

KALAMAZOO,Mich.Recent studies show Kalsec® natural antioxidants extend the shelf life of extruded cereals by delaying the off-set of flavors and aromas. The antioxidants provide a 79% reduction in the formation of hexanal in extruded cereals  that contain 5% milled flax seed. Hexanal is used as a marker for oxidation in foods, which creates off-flavors or cardboard-like notes. Kalsec®  panelists confirmed the increased organoleptic quality of the cereals in the study.
