KALAMAZOO, Mich.The addition of Kalsec® antioxidants maintains fresh aromas and flavors in baked goods, according to studies from Kalsec R&D team. Adding natural antioxidants to baked and extruded goods, such as cookies and bars, resulted in 50% reduction in hexanal values compared to the control. Hexanal, a marker for oxidation, is an indicator of off-flavor and aromas and decreased shelf life.
