DUBLIN, Ohio--The Fine Ingredients Division (FID) of Ashland DistributionCompany (www.ashland.com) and Alfred Wolff(Hamburg, Germany) introduced Quick Acid souring agent, an addition to Wolff'sQuick Products line of advanced confectionery ingredients. Quick Acid is asouring agent for panned confectionery that allows a confectioner to put a layerof citric acid into the matrix of a panned confection without any of thecomplications usually associated with a strong acid coming into contact withsucrose in a panned candy. The co-process technology allows for the formation ofa gelatinous matrix that effectively entraps the acid and stops it from reactingwith the sucrose or migrating within the system. Other Quick Products includeQuick Coat, Quick Glanz, Quick Polish, Quick Lac, Quick Chew and Quick Oil. Formore information, visit IFT Booth #1411.
