A dairy product solid from Proliant Dairy Ingredients, VersiLac®, is a highly dispersible and soluble dairy ingredient that is non-hygroscopic and will not cake or bridge in processing equipment. In controlled applications studies, the ingredient successfully replaced up to 100% of non-fat dry milk, and at least 25% of salt, sugar or cocoa in select bakery, beverage, confectionery, dairy, and savory applications. It also demonstrated versatility in replacing variable cost, corn-based ingredients like dextrose, maltodextrin or corn syrup solids.
