SECAUCUS, N.J.--DSM Food Specialties introduces Neutralact, a high-purity lactase forlow-lactose milk products and whey applications. Neutralact is an enzyme preparation thatcan be added to milk products before consumption. The lactase hydrolyzes the lactose andthe milk can be consumed without discomfort. Neutralact is a purified lactase preparationisolated from a modified strain of the dairy yeast Kluyveromyces (Saccharomyces) lactis,obtained by a process known as self-cloning or homologous cloning. According to thecompany, the key advantage of Neutralact is that the enzyme shows increased purity, whichleads to improved processability of the hydrolyzed milk.
