Sunett Blends Offer Beverage Stability

SOMERSET, N.J.--Carbonated beverages remain stablefor more than 24 weeks when sweetened with Sunett blends rather than singlesweeteners, according to research conducted by Nutrinova Inc., manufacturer ofSunett brand acesulfame K. Carbonated lemon-lime beverages using eightsweetening systems--three single sweeteners and five blends--with the equivalentsweetness of 10 percent sucrose were stored at room temperature for up to sixmonths. At four, eight, 12, 16 and 24 weeks, a trained panel evaluated samplesfor flavor, sweetness, chemical and rounded flavor profile, and aftertaste.While all sweetening systems behaved similarly at four to eight weeks, afterlonger storage periods, the Sunett blends performed better. After 24 weeks, theaspartame-only beverage became less sweet, exhibiting a more artificially sweettaste and aftertaste. In contrast, the sweetness of the 30-to-70 Sunett/aspartamebeverage remained close to that of the sucrose control, so the quality and tasteof the drink were maintained, according to the company.
