SOMERSET, N.J.New sensory research commissioned by Nutrinovashowed that the sweetening system used in hot tea and coffee influences theoverall taste profile of the drink. The study looked at nine sweetening systems,and an independent sensory panel tasted the sweetening systems in instant coffeeand tea drinks at 60 degrees Celsius. The beverages were evaluated byqualitative descriptive analysis, using attributes to describe the sweetness,flavor profile and mouthfeel.
