TIC Gums Offers Cost-Saving, Gum Arabic Alternative

WHITE MARSH, Md.TIC Gums offers its TicaPAN® Quick Crunch to confectioners, with fewer shell layers needed, the product saves time and money without sacrificing quality or performance, serving as an alternative to the traditionally used gum arabic in panned confections like candy and gum.

As the newest edition to the TicaPAN family of coating systems, TicaPAN Quick Crunch produces harder, more durable and crunchier shells for coated chewing gum, candy, nuts and other panned confections.

TicaPAN Quick Crunch offers significant coast savings compared to gum arabic. Fewer shell layers without a loss in strength results in fewer panned layers needed and significant cost in use savings. By reducing the overall shell thickness and maintaining product quality, manufacturers are able to reduce the number of shell layers or shell thickness by as much as 10%. Further, this reduces manufacturing time and the total amount of raw materials needed in the coating formulation. While TicaPAN Quick Crunch is only 1% to 3% of the entire formulation, sugar and sugar alcohols constitute 60% to 75% of the shell, reducing these ingredient amounts also yields significant savings.

The TicaPAN Coating System is a solution for binding and strengthening the sugar and sugar alcohol shells in panned confections. The line also works well for covering or enrobing nuts, chocolate candy, molt balls and other edible products with centers containing volatile oils. The company has also cautioned against gum rosin use.
