Trans-free Shortenings for Doughnut Frying

It takes a special oil to stand up to the rigors of deep-frying. Traditional liquid vegetable oils, such as soybean oil and corn oil, break down quickly when used for heavy-duty frying, generating off flavor, color and smoke, and requiring frequent replacement. Partial hydrogenation increases the stability of these oils, but also generates undesirable trans fatty acids. Palm oil, however, is naturally stable, so it doesnt require hydrogenation and, through fractionation, several different palm oil products can be created. Loders Croklaan blends these fractions to produce the SansTrans DF Select Series, trans-free shortenings designed especially for doughnut frying.
A solid fat is essential in order to prevent oil migration into doughnut coatings, which causes chocolate coating to soften and smear packaging, or slide off the top of the doughnut. Or, in the case of sugar coating, yellow blotches appear after a couple of days," says Gerald P. McNeill, Ph.D., vice president of R&D. While standard palm-oil shortenings efficiently eliminate these defects, they tend to impart a slightly waxy mouthfeel to the doughnut. Our line of SansTrans DF Select products addresses the waxy mouthfeel issue while maintaining the low cost associated with standard shortenings. The DF series also helps maintain the dry texture needed to prevent oil migration."
There are currently two products in the line. SansTrans DF Select 55 is a blend of palm oil and soybean oil. It offers a cost-effective, less-waxy alternative to palm oil shortening/soybean oil blends for doughnut frying. Further, McNeill says, the added soybean oil provides an aroma and flavor that more closely matches that of partially hydrogenated soybean shortenings used for doughnut frying. SansTrans DF Select 60 is designed to replace standard palm oil doughnut-frying shortenings, used when a less-waxy mouthfeel is desired, at a comparable price.
