FSIS OKs Use of Antimicrobial Salts, Acid in RTE Meat Products

WASHINGTONUSDA's Food Safety and Inspection Service (FSIS) issued a notice that it is allowing the use of antimicrobial salts and acids to the list of approved safe and suitable ingredients for use in the production of ready-to-eat (RTE) meat and poultry products.

Effective May 6, 2013, the agency is allowing for the use of the antimicrobial agents potassium sorbate, propylparaben, calcium propionate, sodium propionate, benzoic acid and sodium benzoate in RTE meat and poultry products, in low concentrations, to prevent the growth of Listeria monocytogenes.
