Galactic Introduces New Antimicrobial Solutions

BRUSSELSGalactic introduced two new antimicrobial solutions geared to improve safety, flavor and color in meat and dairy products: Galastar and Galacin.

Galastar is Galactics brand name for starter cultures consisting of lactic acid bacteria and Micrococcaceae. The micro-organisms protect against pathogens, improve color, texture and flavor, and are frequently used to trigger the fermentation process in dried sausages and cooked ham.

Galacin is a mix of natural ingredients including the peptides nisin or natamycin, which are considered some of the best natural antimicrobial solutions available today. They are mostly used in cheese and fermented sausages to prevent bacteria, fungi and yeast or mould spoilages.

Both Galastar and Galacin have the potential to naturally improve food preservation by acting on the microbiological aspect of the product.
