Multifunctional Sweetener for Better Health

In light of mounting concerns about health and wellness, manufacturers increasingly look to reformulate products to boost nutritional impact, or create new lines with healthy appeal from the start.
Sweet Fiber® 10XW, a sweetener from Purpose Foods, replaces sucrose, high-fructose corn syrup and sugar alcohols in foods and beverages—and even stevia in locations where it has been approved for use in foods. This all-natural blend of inulin, luo han guo (the fruit of Siraitia grosvenorii) and natural flavor can reduce calories by almost 97% compared to sugar. Luo han guo is about 150X to 200X sweeter than sugar; Sweet Fiber 10XW is 10X sweeter than sugar and has (1.2 kcal per gram (may vary per each country’s regulations). The ingredient also adds soluble fiber from chicory inulin, which contributes prebiotic benefits, better mineral absorption, improved digestive health and potential weight loss due to increased satiety. The sweetener lacks any discernible aftertaste.
It replaces the sweetness of sucrose 1:10 in beverages, dry mixes, breakfast cereals and confections such as lollipops, among other applications. Designers can replace the missing bulk and functionality from sugar in a number of ways, depending on the application. The company also recently released a 1:1 sucrose-replacement ingredient, targeted for baked goods.
The dietary reference intake (DRI) for total fiber for adults up to 50 years old is 38 grams for men and 25 grams for women. For folks over 50, those numbers respectively decrease to 30 and 21. But USDA surveys show the average intake of dietary fiber by women ages 19 to 50 is about 12 grams; men get only about 17 grams.
Sweet Fiber 10XW is 85% fiber. “Replacing 30 grams of sugar in a product with 3 grams of Sweet Fiber 10XW cuts calories from 120 to 4 per serving, which qualifies as 0 calories under FDA regulations—as long as other ingredients don’t contribute any calories,” says Scott Taylor, president. “Plus, the consumer gets 2.5 grams of soluble fiber per serving, which makes it a ‘good’ source of fiber, or 10% of the Daily Value.” Foods that can qualify for such fiber label claims must also meet FDA criteria for low saturated fat, low cholesterol and low fat. Mixing Sweet Fiber 10XW with apple-juice solids before reconstituting could boost fiber and reduce calories in apple juice while maintaining a “100% natural” claim.
This fine, white powder has excellent solubility and dispersability in water (120 grams per liter at 25°C; 350 grams per liter at 90°C) and is kosher pareve.
