Stratum to Present ApuraGreen Kiwi Paste at IFT

ST. LOUISStratum Nutrition's ApuraGreen kiwifruit paste offers a clean label fat replacement option and extended freshness when used in baked goods, according to new application studies that will be presented during the IFT Annual Meeting on July 13 to July 16 in Chicago.

ApuraGreen's composition allows for softer baked products with an extended shelf life. It is a single, natural ingredient from a whole fruit, and it is non-GMO, gluten-free, and GRAS (generally recognized as safe) with no artificial preservatives or additives. The ingredient comes from New Zealand kiwifruit, which has naturally high levels of vitamins C and K, as well as dietary fiber. It can be used to replace sugar, eggs, dairy products, butter, cooking oils and casein-derived products in baking.

Ibrahim Abou-Nemeh, Stratum food applications expert, will present the benefits of the kiwi paste ingredient in baking applications during ApuraGreen- a Novel Kiwifruit Paste Food Ingredient for Fat Replacement and Freshness Extension of Bakery Products" on July 16. This presentation will be given as part of the New Ingredient Technologies Sessions.
