So Sweet, is an all-natural sugar substitute derived from citrus, is 600 times as sweet as sucrose, dissolves easily in water, and is acid and heat stable. Oh! So Sweet is GRAS (generally recognized as safe) and may be classified as a natural flavor, spice or natural extract under Food and Drug Administration (FDA) regulations. Oh! So Sweet is ideal for use in beverage formulations, and in low carb, low calorie foods, and has a minimum shelf life of three years, according to the company. It is non-hydroscopic and has a pH of 6 in a 30 percent solution.
