HORGEN, SwitzerlandDow Wolff Cellulosics introduced three new product solutions to help food manufacturers create functional foods and beverages. METHOCEL Gluten Replacement is an ingredient that helps eliminate technical problems associated with gluten removal from pastas, cereals and breads. METHOCEL Fat Replacement is used to replace trans- and saturated fats in meat and bakery products with healthier oils, such as olive or canola. It allows product formulators to reduce the fat content of their products by up to 60-percent, while still maintaining taste, texture and tenderness. Lastly, Clear+Stable allows manufacturers to use less cellulose gum in formulations, while still achieving the stability needed. It also helps improve protein protection in acidified milk and soy drinks which lowers formulation cost by reducing the quantity of ingredients.
