Non-allergenic Egg Wash Launched

BRANDE, DenmarkKMC has launched an alternative to egg wash and dairy-based bakery glazes called GlazeMaker 25. The glaze is non-allergenic and based on potato starch rather than eggs. Recent battery cage legislation in Europe has driven up the cost of eggs, making alternatives more cost-efficient. Additionally, a potato starch base offers an alternative to consumers with egg or dairy allergies.

GlazeMaker 25 still creates an egg-like shine on baked goods and also serves as an adhesion for toppings like sesame seeds, salt or icing. The adhesive qualities remain even after freezing baked goods. Because it is unnecessary to heat GlazeMaker 25, bakers are able to use the solution within minutes following the addition of water. The product is applied via brush or spray either before or after baking.
