Probiotic Yogurt Receives High Taste-Test Ratings

ROSEMONT, Ill.--A new strawberry-flavored probiotic yogurt formulatedwith acid whey protein powder created by Dairy Management Inc. (DMI; www.extraordinarydairy.com)received high taste-test scores, according to DMI. The taste-test panel includedfrequent and sporadic yogurt eaters.

The yogurt was formulated with acid whey powder (AWP) from cottage cheese,which replaced a portion of the yogurts nonfat dry milk. Acid whey is rich inpeptides and amino acids, which enhances the yogurt by acting as a prebioticthat stimulates the growth of healthy probiotic bacteria, thereby offeringhealth benefits beyond basic nutrition, according to the company. DMI alsostated other advantages to adding AWP to yogurt, which include upping itsprotein and calcium content and increasing predigested nitrogen, which canimprove the growth and viability of helpful bacteria.
