AUBURN, Ala.Food-industry professionals and students who are interested in learning about the eggfrom formation through packagingare invited to attend the National Egg Products School, October 10-14, 2010, at Auburn University. The annual, four-day, hands-on program covers egg microbiology and composition, handling, storage and the processes for producing egg products. There is significant time spent on functionality, the marketing of egg products, and the latest research on egg nutrition. American Egg Boards Research Chef Walter Zuromski will present a track based on the culinary aspects of egg products, with an emphasis on choosing the best egg product for specific functionality and sensory needs. Continuing education credits are available.
