DSM Culture Ranges For Cottage Cheese Processing

HERLEEN, The NetherlandsDSM is launching two new cheese culture ranges for cottage cheese applicationsDelvo®Cheese CC-300 and Delvo®Cheese CC-200, designed for medium- and large-scale cheese producers to create dairy products with improved texture and mouthfeel through optimized processes.

The Delvo Cheese CC-300 range provides set times between 5 and 5.5 hours for fast and consistent acidification. The range also achieves high-curd integrity that allows for accurate dosage of cream. In addition, the CC-300 series delivers 10 rotations for rapid processing suitable for large-scale producers.

The Delvo Cheese CC-200 range was specifically developed for cheese plants using mesophilic solutions and delivers improved phage protection with four rotations and superior curd integrity. Both the CC 200 and CC 300 range cultures can preserve the characteristic mild flavor over the course of the products shelf life.

The trend toward health and wellness has been one of the main drivers behind the growth of healthy and versatile dairy products, such as cottage cheese," said Karnika Goel, product line manager cheese, DSM. Cottage cheese is a source of protein and calcium, but also offers multiple applications, ranging from sweet desserts to savory snacks."

Earlier this year, DSM launched Delvo®Cid+, a natural preservation solution for beverages, to keep drinks fresh and clean-tasting for longer by applying the benefits of natamycin.
