All indications point to the continued growth of the natural and organic food sector. According to the Organic Trade Association (OTA), Greenfield, MA, retail sales of organic foods in the United States are projected to hit $20 billion in 2007 and continue to grow at an average annual rate of nearly 20%. OTA also notes that natural products—a category where consumers have grown increasingly intolerant of artificial additives—have grown into a $51 billion industry with continued, steady annual growth averaging 16% each year.

To meet flavor needs in these rapidly expanding sectors, Mastertaste has created the Super- Natural™ Collection, a line of natural flavors completely derived from nonsynthetic materials, thereby permitting cleanlabel applications. The flavors are processed without extraction solvents, except fermentation-derived alcohol and carbon dioxide. These flavors are suited for natural foods, as well as certified- organic foods—products labeled as “organic” or “made with organic ingredients”— whenever a suitable organic equivalent is not available, as dictated by sections 205.605(a), 205.605(b) and 205.606 of the National Organic Program’s National List (see www.ams.usda.gov/NOP/NationalList/ListHome.htmlfor details). Since the SuperNatural flavors are not certified-organic, they are not appropriate for “100% organic” products. However, they are less expensive than certified-organic flavors.

The flavors are available in sweet options like apple, banana, blueberry, cherry, chocolate, cranberry, Concord grape, lemon, orange, peach, pineapple, raspberry, strawberry and vanilla, all WONF. Savory flavors in the line include barbecue, chicken drippings WONF, chicken, chicken type and pesto. Customized flavors are available upon request.

They are free of artificial or synthetic flavoring substances and colors, artificial solvents, artificial preservatives (like benzoates, sorbates and sulfites), synthetic antioxidants (like EDTA, BHA or BHT), weighing agents (like ester gum or brominated vegetable oil), hydrogenated oils and mineral oils, flavor enhancers (like monosodium glutamate or hydrolyzed vegetable protein), ingredients derived from genetically modified organisms or irradiated foods, mineral acids and chemically modified starches. The flavors help designers develop all-natural and organic products that meet the strict, self-imposed specifications—above and beyond USDA organic standards —of major natural-foods retailers.

These flavors are suitable for a wide range of applications, including confectionery, sauces, marinades, salad dressings, baked goods, granola and nutraceuticals. Like the company’s conventional flavors, the SuperNatural flavors are heat stable and suited to use in sweet and savory products subjected to high-heat processing. The highly concentrated, liquid, freeze-dried and oil-soluble flavors permit low use levels, usually 0.1% to 0.3%.
